    “Waldorf Style” chicory salad

     

    (preparation time less than 10 minutes)

     

    Ingredients:

    3 heads of chicory
    two small apples
    handful of walnuts
    1 small pot of soy yoghurt (nature so no fruits or sugar added)
    2 table spoons of soft goat cheese spread

     

    Preparation:

    Chop the chicory, apples and walnuts and mix together

    Mix two table spoons of goat cheese spread with the soy yoghurt and stir through the salad.

     

    Add some black pepper and bon appétit!
