Quick fix Sicilian style pasta
(shouldn’t take more than 20 minutes to prepare!)

 

Ingredients:

2 large onions
4 garlic cloves
3 tins of good quality sardines in Olive oil (preferably organic)
300g gluten free spaghetti (Barilla is an excellent brand for gluten free pasta)
2 table spoons of pesto (red or green), the pesto is optional though, it’s just as good without

 

Cooking the pasta:
Unlike regular pasta, gluten free pasta requires a bit more monitoring whilst cooking. The key is in the stirring, you should stir it almost constantly whilst cooking otherwise you’ll end up with one big lump of spaghetti. Don’t look at the packaging for the time, just taste from time to time to see if it’s soft enough to your liking.

 

Chop the onions and garlic into small dices and fry in the pan with red palm oil, coconut oil or butter (NOT olive oil). When the onions and garlic are soft add the tins of sardines with oil and all into the pan. Make sure you turn down the heat at that stage; we don’t want to overheat the olive oil. Break the sardines into small pieces. If you want a spicier version, replace one of the tins of regular sardines with a tin of spicy sardines.

Tip your pasta into the pan and stir everything. At that point you can add some pesto if you want but even without extra pesto this dish is tasty.

 

Serve with some parmesan and black pepper.
