Ingredients:

300g pulp (carrot, apple, ginger)
150g ground almonds
50g ground hazelnut
4 table spoons of rice flour
2 table spoons of coconut oil
3 eggs
1 teaspoon of baking powder
200g dark organic chocolate (85%)
3 table spoons of honey (you could also use agave or add xylitol to sweeten the cake)

 

  • Blend the pulp in a blender with some water so you have a smooth substance

  • Mix the pulp with the ground almonds, ground hazelnuts, 3 eggs, baking powder and rice flour

  • Bring to boil a pan of water and in glass bowl on top melt the chocolate, honey and  coconut oil

  • Mix everything together

 

Spoon it into your greased loaf tin and bake at 200Degrees for about 30-35 minutes

 

To serve , I put some Greek yoghurt and some berries on top.
